They are intended to protect the fingers from fat and, above all, offer an attractive appearance. Poultry cuffs are used in the restaurant trade, in the home and in catering.
In the past, silver skewers were used in upscale restaurants to decorate the protruding bones of the roast, but then paper sleeves became a cheap substitute. Johann Rottenhöfer's cookbook "Neue vollständige theoretisch-praktische Anweisung in der feinern Kochkunst" (New Complete Theoretical and Practical Instructions in Fine Cookery) showed a Westphalian ham decorated with a paper sleeve and silver skewers in 1859.
