Coins are stored in rolls of paper in the bank or savings bank. Surely you have seen more than once when a cashier in a store or supermarket unrolls a roll of coins and divides the corresponding coins into the various cash compartments.

So a "nice stack of money" is literally a particularly long paper roll of coins. If one earns a stick of money, the salary is therefore particularly high.
