Why does baking paper not burn in the oven?

The Roman recipe collection De re coquinaria by Apicius already mentions paper for covering or wrapping food that was to be prepared in the oven.

German writings from the 17th to 19th centuries also show how paper was made that could stand a medium fire. For example, papers were greased with butter or tree oil to prevent food from burning into the roasting pans in the oven.

Baking paper is a coated paper. It is laid out in baking pans and on baking sheets to prevent the baked goods from sticking. This eliminates the need for greasing, which was often used in the past.

Normally, baking paper should only be used up to a temperature of 250 °C and should not come into contact with heat sources such as grill sticks. In Europe today, the silicone-coated versions are mainly on offer, which can also be used for longer time and at higher temperatures.
